The best grilled cheese sandwich made with cheese that you may actually have in your fridge: 1 slice of white american, fresh sliced mozzarella, and medium cheddar. In the middle of the cheese, place thinly sliced tomato, on top of the tomato, a little fresh ground pepper, Lawry's Garlic Salt and dry italian seasoning. Cook over a low heat (you may even want to cover the pan) to allow time for all cheese to melt without burning the bread.

The Polynesian resort at Disney World makes a grilled cheese sandwich that they call the "grown-up grilled cheese" that has Cheddar, swiss, and blue cheese. It is fantastic. They actually use sunflower seed bread as well for another twist. As long as you don't use too much blue cheese, which would overwhelm the other cheeses, this combination is delicious.

Gouda makes an awesome grilled cheese. I personally like to put a dollop of goat cheese in the sandwich as well. It makes it really creamy and flavorful. Tastes good made with tomato as well.

I really like it with the classic American cheese (and tomato soup. If you put mozzarella cheese with pepperoni in your sandwich that's really good too.
